disclaimer // I am NOT a professional cook, chef, or even very handy with a knife. We keep gauze pads, an array of fun band-aids, butterflies, and Neosporin, on hand, at all times. I am however a person who occasionally likes to pretend I know how to cook. I LOVE trying new things. Typically new, healthy things, so that’s what I’m here to do. The newest addition to my cookbook collection, The Oh She Glows Cookbook, arrived on my doorstep several weeks ago and while I’ve made a few things from it so far, I’ve not had time to take pictures and document my LOVE for this new book, till now. While this cookbook is not as ‘tell it like it is’ and ‘explain every little thing’ as the Thug Kitchen cookbook, it does require equally as easy-to-find ingredients! Plus, if you’re not into the offensive humor that TK tends to supply SO abundantly, then maybe Oh She Glows is more your style!
Now, who doesn’t love a good ONE-POT wonder? If you’re like me, and by “me,” I mean hate cleaning up 15 dishes that are used to make a soup that eventually ends up in 1
effing pot, then this recipe is screaming your name. This super simple recipe calls for only the most basic of ingredients and still tastes like MAGIC. In fact, you probably have most of the ingredients in your kitchen already. In addition to my favorite TK minestrone, this spicy concoction has made its way into my homemade, frozen soups lunch rotation! I love when people ask what I’m eating and if I bought it somewhere! Nope, it’s FRESH, and made right in my kitchen, my dears.
By the way, if you don’t like a little spice, turn back. And if you don’t like cats, don’t look at my amazing tea towel.
Angela Liddon (the amazing author of this book), was kind enough to post this recipe on her blog, so you don’t even need the cookbook. Yet. Happy healthy-eating, lovelies!
